I love vegan mashed potatoes. It’s one of my top comfort foods. There’s really nothing better than eating a warm bowl of whipped mashed potatoes and fried chicken or cauliflower. 

A couple of years ago I discovered tofutti sour cream which rocked my world. Being allergic to dairy, I had never really experienced sour cream. Now I can enjoy sour cream with all my favorites like nachos, sour cream apple pie, burritos, spinach dip, artichoke dip, and of course digging into AMAZING whipped potatoes… Mmmmm.

Unfortunately, it comes in a plastic box, covered with plastic film, and it has some questionable ingredients. Hydrogenated soybean oil? Its main ingredient is water and it’s loaded with sugar. But, now that I’ve tasted the holy grail, there’s no way I’m going back to lame dairy free mashed potatoes.

So, I’ve been experimenting with different ways to make non-dairy sour cream. I had a happy accident and made cream cheese! Woo-hoo! But, I finally nailed my dairy free mashed potatoes recipe. It only takes about 15-20 minutes, making it a serious dinner win!

  • 16 Small Red Potatoes (yellow potatoes are fine or four peeled russets)
  • 1 1/3Cup of Cashews
  • 2 Cups of Starch Liquid
  • 2 Limes Juiced
  • 1/4 Cup White Vinegar
  • 2 Teaspoons of Salt
  • 1 Cup of Good Olive Oil

step 1: boil potatoes & cashews

Fill a large pot with water and bring to a boil. Add chopped potatoes and cashews. The potatoes and cashews should be ready after about 15 minutes. You should be able to easily insert a fork into the potatoes, and the cashews should be plump.

step 2: whip potatoes

Place the potatoes in a separate bowl and set aside. Put your cashews, 2 cups of the starchy potato liquid, and all of the other ingredients in a blender or food processor. Whip until smooth 2-3 minutes. Mash your potatoes and fold in your creamy cashew mixture. Add extra salt, pepper, oil, green onions, or my personal favorite smoked paprika for a pretty garnish.

what kind of potatoes do I need?

Our preference is red potatoes because they enhance how creamy they are. However, you can also use Yukon Gold or Russet potatoes.

can I add vegan butter?

Sure, it’s fine to add vegan butter if you want to. Typically, the olive oil gives them a buttery texture and flavor, but it’s entirely up to you.

  • 16 Small Red Potatoes (yellow potatoes are fine or four peeled russets)
  • 1 1/3 Cup of Cashews
  • 2 Cups of Starch Liquid

    1. Well you don’t blend the potatoes. I hope I made that clear. Eek! You’ll have potato purée. They’re in a separate bowl. You blend everything else and fold it into the mashed potatoes.

We had been dating three years so they knew I had a dairy allergy. It was the worst. We had to find something drive through for me. This whole month I’m doing dairy free thanksgiving recipes. I have to tell you when I saw the title I had a flash back to the m&m Christmas commercial where the m&ms see Santa and one of them says, "He does exist" and faints then Santa says "They do exist" and faints… that’s how I felt… "Dairy free mashed potatoes..they do exist!"

When I married, I learned my in-laws’ secret for the most potato-y mashed potatoes I have ever potatoe-d: salt the water when it boils, cook until tender, drain (reserving all the liquid), add a tablespoon of margarine or butter, mash it up, then add the liquid back in to your desired consistency. (We also use any leftover liquid in gravy or stock)
